A paring knife forged to shape from high-carbon steel, with a short blade for peeling, trimming and work in the hand. Like everything in the shop it is made one at a time: the photograph is a representative example, and the handle wood, spacer and finish differ from piece to piece.
Carbon steel takes a very keen edge and is easy to sharpen at home. It will patina with use and should be dried after washing. See Care & Sharpening.
